The table above was copied from an article in the Daily Mail of 5th March 2001. The research was carried out by a Mr Thomas and was ratified by Professor Tim Lang of the Centre for Food Policy at at the Thames Valley University who in the article said........
"These are big percentages. The nature of production is altering what we are eating. Plant breeders have been trying to develop tomatoes, carrots and fruit that look nice, resist disease and can stand being shipped halfway around the world. They have been less concerned about the minerals in the food. We are dying prematurely of coronary heart disease and cancer and we are being told to cut down on fat and eat more fruit and vegatables. But at the same time they are changing what we are eating."
